Ingredients

- 1½ cups flour

- 1 teaspoon baking soda

- 1 teaspoon baking powder

- ¼ cup brown sugar

- ½ teaspoon salt

- ½ cup rolled oats

- 3 large ripe bananas

- 2 tablespoons ground flaxseed

- ⅓ cup unsweetened soy milk

- ⅓ cup vegetable oil
-
- 2 tablespoons maple syrup
-
- 1 tablespoon vanilla extract

- 1 cup of Mini Dairy Free Chocolate Chips (divided)
Step-by-Step Guide
Step 1 :
Heat: To 350°F (175°C). Grease a loaf pan or line it with parchment paper all four sides so the bread is easier to remove.
Step 2 :
Combine the Dry Ingredients – Take a large mixing bowl and add together flour, baking soda, brown sugar, rolled oats, salt & baking powder. Stir well and set aside.
Step 3 :
Wet: Combine mashed bananas (they should be very smooth and not have any chunks at this point) in a large bowl. Mix in the ground faxseed, unsweetened flavored soy milk (I used vanilla this time), vegetable oil, maple syrup and vanilla extract. Whisk the wet ingredients together until evenly mixed.
Step 4 :
Fold Wet Mixture With Dry: Slowly pour wet ingredients into the bowl with dry. Mix until just combined— do not to over mix and loose the air in it which makes for a light fluffy banana bread. And stir in half of a cup of the dairy-free mini chocolate chips by hand with a rubber spatula.
Step 5 :
Batter – Pour the batter into a loaf pan (I Love to prep my pans with parchment paper) Spread out evenly. Sprinkle on top the other 1/2 cup of chocolate chips and spread them out nicely for extra chocolaty coverage.
Step 6 :
Bake: Meanwhile, preheat oven to 350 degrees with rack in the center. Bake for about 50 minutes in a convection or regular oven and until golden brown along edges of pan (middle may still be slightly soft). To see if the banana bread is done, insert a toothpick in the center of it and make sure only moist crumbs stick to it.
Step 7 :
Cool and Serve: Cool the banana bread in the pan for about 10 minutes before transferring it to a rack to cool completely.
